- In a mixing bowl, whisk together Greek yogurt, olive oil, minced garlic, lemon juice and zest, red wine vinegar, oregano, cumin, smoked paprika, salt, and pepper.
- Add chicken thighs to the marinade, coating thoroughly. Cover and refrigerate for at least 30 minutes, ideally overnight.
- Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
- Arrange marinated chicken in a single layer in the air fryer basket. Cook for 10–12 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C).
- Optional: Slice cooked chicken and air fry for an additional 2–3 minutes at 400°F for crispy edges.
- Let chicken rest for 3–5 minutes, then slice thinly against the grain.
- Warm pita breads in a dry pan or air fryer for about 30 seconds.
- Assemble gyros by layering chicken, tzatziki, tomatoes, onions, cucumbers, and optional feta and olives onto the pita. Wrap and serve immediately.
Notes
For extra flavor, marinate chicken overnight. Don't overcrowd the air fryer to ensure crispness. Customize toppings with your favorites like spicy peppers or hummus!
