Ingredients
  

  • 3 cups Beyond Steak strips (divided for 3 recipes)
  • 1 sliced onion (divided)
  • 1 chopped bell pepper (divided, optional)
  • 1 tbsp olive oil or vegetable oil (for tacos)
  • 6 small corn or flour tortillas
  • 1/2 cup salsa
  • 1/2 avocado, sliced
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 lime, cut into wedges
  • 1 cup broccoli florets
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tsp minced garlic
  • 1 tsp grated ginger (optional)
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds (optional)
  • 1 steamed rice or noodles (for serving)
  • 1/2 cup cherry tomatoes
  • 1/2 cup cubed red onions
  • 1/4 cup zucchini slices (optional)
  • 2 tbsp soy sauce (for marinade)
  • 1 tbsp olive oil (for marinade)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp maple syrup or honey (optional)

Equipment

Method
 

  1. Heat oil in a skillet, sauté onions and bell peppers for 3-5 mins.
  2. Add Beyond Steak strips, cook 4–5 mins until browned.
  3. Warm tortillas in a skillet or oven.
  4. Assemble tacos with Beyond Steak, salsa, avocado, and cilantro.
  5. Heat sesame oil in skillet, sauté garlic and ginger for 30 sec.
  6. Add broccoli and bell pepper, stir-fry 3–4 mins.
  7. Add Beyond Steak and soy sauce, stir 2–3 mins.
  8. Serve over rice/noodles, garnish with green onions and sesame seeds.
  9. Mix marinade ingredients in a bowl.
  10. Marinate Beyond Steak and veggies for 15–60 minutes.
  11. Thread steak and veggies onto skewers.
  12. Grill skewers 2–3 mins per side until charred and hot.

Notes

Customize with your favorite veggies or sauces. For tacos, try chipotle mayo. Stir-fries go great with hoisin or teriyaki. Marinate skewers longer for deeper flavor. Store leftovers in airtight containers for up to 3 days in the fridge.
