FAGE Banana Bread

Ingredients
  

  • 4 ripe bananas preferably with brown spots
  • 180 g FAGE Total Greek Yogurt
  • 3 large eggs
  • 30 ml maple syrup or substitute with honey or agave syrup
  • 280 g all-purpose flour or substitute with whole wheat flour
  • 16 g baking powder one sachet
  • 80 g dried fruit mix raisins, cranberries, or chopped dates; can substitute with nuts or chocolate chips

Instructions
 

  • Preheat your oven to 175°C (347°F) and line a loaf pan with parchment paper or lightly grease it.
  • Peel and mash the ripe bananas in a mixing bowl until smooth.
  • Add FAGE Greek yogurt, maple syrup, and eggs to the mashed bananas. Whisk until creamy and well combined.
  • In a separate bowl, sift together the all-purpose flour and baking powder.
  • Gradually fold the dry ingredients into the wet ingredients, stirring just until combined. Avoid overmixing.
  • Gently fold in the dried fruit mix or other add-ins of your choice.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Customize with chocolate chips, nuts, or cinnamon. Use very ripe bananas for best sweetness. Let it cool completely for clean slices. Wrap and freeze slices for longer storage.
