  • 3 ripe but firm peaches halved and pitted
  • 6 cups mixed salad greens arugula, spinach, or spring mix
  • ½ cup crumbled goat cheese or feta cheese
  • ¼ cup toasted pecans or walnuts optional: almonds
  • ¼ cup pomegranate seeds or dried cranberries optional
  • 1 tbsp olive oil for grilling the peaches
  • For the Balsamic Vinaigrette:
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup for a vegan option
  • Salt and black pepper to taste

Instructions
 

  • Prepare the Peaches:
  • Preheat your grill to medium-high heat.
  • Brush the cut side of the peaches with olive oil to prevent sticking.
  • Grill the Peaches:
  • Place the peaches cut-side down on the grill.
  • Grill for 3-4 minutes until you see char marks, then flip and grill for another 2-3 minutes.
  • Remove from the grill and let them cool slightly before slicing.
  • Prepare the Dressing:
  • In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until emulsified.
  • Assemble the Salad:
  • In a large salad bowl or platter, arrange the mixed greens.
  • Top with grilled peach slices, crumbled goat cheese, nuts, and optional pomegranate seeds or cranberries.
  • Drizzle and Serve:
  • Drizzle the balsamic vinaigrette over the salad just before serving.
  • Toss gently and enjoy immediately!
