Ingredients
  

Base Mixture
  • 1/2 cup pumpkin purée not pumpkin pie filling
  • 1/4 cup almond butter or nut/seed butter of choice
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
Dry Ingredients
  • 1/2 cup oat flour
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin spice
  • pinch of salt

Method
 

  1. In a mixing bowl, combine pumpkin purée, almond butter, maple syrup, and vanilla extract. Mix until smooth.
  2. Add oat flour, cinnamon, pumpkin spice, and salt to the wet mixture. Stir until a soft dough forms.
  3. Roll the dough into 1-tablespoon sized balls and place them on a parchment-lined plate.
  4. Optional: Roll truffles in cocoa powder, shredded coconut, or crushed nuts for coating.
  5. Chill the truffles in the refrigerator for 15 minutes to firm up before serving.

Notes

Feel free to get creative with flavors by adding espresso powder, chai spice, or dipping in vegan chocolate. Store in the fridge for up to a week or freeze for longer.
