Main Ingredients

  • 6 large egg whites chilled
  • 1/2 cup unflavored whey protein powder or egg white protein powder for dairy-free
  • 1/4 cup full-fat Greek yogurt unsweetened
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon baking powder optional, for extra rise

Instructions
 

  • Preheat your oven to 320°F (160°C) or 350°F (180°C) if not fan-forced.
  • Grease and line a bread pan with parchment paper.
  • Separate egg whites carefully into a clean, dry mixing bowl. Ensure no yolk gets into the whites.
  • Whisk egg whites with cream of tartar using an electric mixer until stiff peaks form.
  • Gently fold in the whey protein powder and baking powder if using.
  • Fold in the Greek yogurt carefully until just combined. Do not overmix.
  • Spoon the batter into the prepared bread pan and smooth the top with a spoon.
  • Bake for 30 minutes. Turn off the oven and leave the door slightly open with a towel for 20-30 minutes to cool gradually.
  • Remove from the oven, let it cool completely before slicing and serving.

Notes

For a savory variation, add shredded cheddar and herbs. For a sweet twist, add cinnamon and vanilla extract with a sprinkle of monk fruit sweetener on top before baking.
