Method
- Preheat your oven to 320°F (160°C) or 350°F (180°C) if not fan-forced.
- Grease and line a bread pan with parchment paper.
- Separate egg whites carefully into a clean, dry mixing bowl. Ensure no yolk gets into the whites.
- Whisk egg whites with cream of tartar using an electric mixer until stiff peaks form.
- Gently fold in the whey protein powder and baking powder if using.
- Fold in the Greek yogurt carefully until just combined. Do not overmix.
- Spoon the batter into the prepared bread pan and smooth the top with a spoon.
- Bake for 30 minutes. Turn off the oven and leave the door slightly open with a towel for 20-30 minutes to cool gradually.
- Remove from the oven, let it cool completely before slicing and serving.
Notes
For a savory variation, add shredded cheddar and herbs. For a sweet twist, add cinnamon and vanilla extract with a sprinkle of monk fruit sweetener on top before baking.
