  • 6 large egg whites chilled
  • 1/2 cup unflavored whey protein powder or egg white protein powder for dairy-free
  • 1/4 cup full-fat Greek yogurt unsweetened
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon baking powder optional, for extra rise

Method
 

  1. Preheat your oven to 320°F (160°C) or 350°F (180°C) if not fan-forced.
  2. Grease and line a bread pan with parchment paper.
  3. Separate egg whites carefully into a clean, dry mixing bowl. Ensure no yolk gets into the whites.
  4. Whisk egg whites with cream of tartar using an electric mixer until stiff peaks form.
  5. Gently fold in the whey protein powder and baking powder if using.
  6. Fold in the Greek yogurt carefully until just combined. Do not overmix.
  7. Spoon the batter into the prepared bread pan and smooth the top with a spoon.
  8. Bake for 30 minutes. Turn off the oven and leave the door slightly open with a towel for 20-30 minutes to cool gradually.
  9. Remove from the oven, let it cool completely before slicing and serving.

Notes

For a savory variation, add shredded cheddar and herbs. For a sweet twist, add cinnamon and vanilla extract with a sprinkle of monk fruit sweetener on top before baking.
